Cous cous with melon, avocado, mint, pine nuts and shavings of Grana Padano Fattorie Cremona

PREPARATION

Prepare the cous cous according to the instructions on the packet. Peel and chop the avocados, place them in a bowl and drizzle with lemon juice. Open the melon in half, remove the seeds and make many small balls with the pulp, using the special digger and add them to the avocados. Grain the couscous and add it to the bowl, together with flakes of Grana Padano Fattorie Cremona, chopped chives, pine nuts and mint leaves. Dress with a drizzle of extra virgin olive oil, salt and pepper to taste and serve cold, garnished with shavings of Grana Padano Fattorie Cremona.
