Saffron meringue with sausage and Parmigiano Reggiano PDO cheese

PREPARATION

The first recipe we are going to present is a Saffron meringue with Monza luganega meat and Grana Padano PDO Riserva aged cream. To make our recipe we need the following ingredients: Grana Padano PDO cheese Riserva aged, milk, cream, Monza luganega meat and some very light saffron meringues we prepared earlier, and fennel. Mix the milk, the cream and the Grana Padano Riserva aged in equal parts. Blend everything at a temperature of 70° for 5 minutes approx. Let’s drain the cream and once it’s cooled we’ll transfer it to a bottle ready to be served. We plate up our welcome snack. Season the luganega meat with oil and pepper. We mix everything. Let’s form a small chenelle that we place on the meringue. We finish with the cream of Grana Padano and some small fennel leaves.
