Clean the radicchio well, separating the leaves and rinsing them one by one under running water, then cut them into strips of one centimeter but coarsely. Fry the onion in the oil and when it starts to brown add the radicchio and cook it over a moderate heat. Prepare the water for the pasta and dice the Provolone Fattorie Cremona. Deglaze the radicchio with the white wine and check that it is cooked for about 15 minutes, which may vary depending on whether you prefer your radicchio soft or al dente. If it dries out too much, you can dilute it with some of the cooking water from the pasta. Drain the pasta and pour it into the radicchio pot, add Sharp Provolone Fattorie Cremona and mix well to melt it. Continue cooking over high heat for a minute, mixing all the ingredients well and serve.
